At the helm of this unique culinary venture is Master Chef, Steven Hauser, a retired emergency service professional and disabled veteran with a passion for food, history, and bringing people together.

The centerpiece of the operation is a fully restored 1890s Newton Chuck Wagon, registered number 87 with the American Chuck Wagon Association. This isn't just any food truck; it’s the only registered chuck wagon in the state of Idaho, and it brings a slice of the Old West to every event it graces. Whether catering cowboy weddings, community events, or private gatherings, Steven’s motto is clear: “Where food brings people together.”

A Cook With a Story
Steven’s journey into chuck wagon cooking began as a business class project in 2014. What started as an idea quickly turned into a heartfelt mission. With 48 years of experience in the military, fire service, and law enforcement, Steven has seen the importance of connection—and how food can foster it.
“My kitchen is my happy place,” Steven shares. “It’s unique because it’s a restored western chuck wagon. I use mesquite wood, Dutch ovens, and open fire to bring meals to my customers. I believe you feed their bellies before you can talk to their hearts.”

The Long Trail Chuck Wagon has a well-earned reputation for its comforting, Southwest-inspired dishes. From savory stews to perfectly cooked meats, every meal is crafted with care and authenticity, reminding diners of a simpler time when food was cooked over an open flame and shared under the stars.

An Immersive Western Experience
Dining with The Long Trail Chuck Wagon is more than just eating—it’s an immersive experience. Whether it’s a cattle drive, a mission trip, or a special event, Steven creates a space where history, food, and community come together. His background in emergency services and the military has instilled in him a profound respect for those who serve, and his cooking often honors that legacy.
Over the past three and a half years, The Long Trail Chuck Wagon has become a beloved fixture at events like the North Idaho Saddle Mule Club gatherings and the Northern Idaho Draft Horse Mule Association. In Texas, Steven’s chuck wagon has even been a centerpiece for cowboy weddings and cooking demonstrations.

Looking Ahead
As Steven continues to grow his business, his eyes are on expanding the educational aspect of The Long Trail Chuck Wagon. This spring, he’ll teach Dutch oven cooking and share chuck wagon history and etiquette at the R. A. Brown Ranch in Throckmorton, Texas. Back in North Idaho, he plans to bring this unique experience to more local events and special occasions.
